Let me start this story by saying how much easier it is when babies are infants to get them to eat their veggies. Both my kids always loved mealtime and would eat anything I gave them – even crazy concoctions of kale and spinach. But somewhere in the change from infant to toddler, things shifted a little and now veggies are.. well – “yuk” in his words..
Since he thinks he’s too cool for ants on a log and carrots with ranch, I discovered a new way to get veggies in him and actually have him LIKE it. Meet Garden Lites – a muffin made with 1/3 of veggies! But that’s not all – it’s also gluten-free, egg free and HUGE on taste.
Since he turned up his nose at my ants on a log snack, I gave him a chocolate muffin but didn’t tell him it was made with veggies. He thought it was his lucky day to get a chocolate muffin over a plate of veggies and devoured it in about 27 seconds. After he was done, I told him “I just made you eat your veggies!!” He laughed out loud and didn’t believe me until I showed him the package. Score!
Ok, so you’re probably thinking, “This is made with 1/3 veggies, gluten free and egg free… It must taste terrible!” I have to admit even I was skeptical to try them because I don’t usually find gluten free foods to be the best tasting stuff. Then I tried a bite… and “wow” was the first word I could think of.
I even got the banana chocolate chip flavor – Do you see the green bits of veggies?
If you want to try these (and I highly recommend it, especially for picky kids) you can find these at Kroger, Target and a few other grocery stores. Check their store locator to find a shop close to you that carries them. They will be in the freezer section, so look for them there.
