A favorite summer recipe of mine is southwest salsa. It’s great with chips, soft tortillas, eggs, chicken – the list goes on. Its a blend of beans, corn & tomatoes that conjure up one of the healthiest tasty treats I know. I love it because all you need is a few ingredients and you can put together a fresh-mex snack in no time flat.
Every couple of grocery trips, I like to stock up on canned tomatoes because I use them in so many of my recipes. I thought that the fire roasted diced tomatoes would have made the best fit for my southwest salsa recipe. I picked up 2 cans, along with 1 can of black beans and 1 can of corn nibblets.
Here’s the full list of all the ingredients:
- 2 cans of hunts diced tomatoes (I used fire roasted)
- 1 can of black beans
- 1 can of corn nibblets
- 1 red pepper
- 1 sweet yellow pepper
- 1 sweet orange pepper
- 1 small onion, diced
- 1/4 cup fresh chopped cilantro
- 1/2 tsp salt
I started by chopping all my veggies and setting them aside in a large bowl. Then with a colander I drained and rinsed both the can of corn and black beans and combined it with the chopped veggies. Then finally, I opened both cans of Hunts Diced Tomatoes and added them to the mix without draining them. Season and add the cilantro and a couple of tablespoons of fresh squeezed lime juice and its ready to eat!
On its own, this is perfect to serve with some tortilla chips, but you can also take it a step further and dress up your food with it! I served my potato and egg fritata topped with this southwest salsa and it was amazing!
