Now with summer upon us, big heavy meals aren’t what we are craving these days. Our idea of summer food is all about fresh, delicious & healthy snacks. Tomato Bruschetta is one of my personal favorites from way back and I love making this one in the summer months. For this recipe, I used one of the best canned tomatoes around – Hunts Diced Tomatoes!
I got the idea to make tomato bruschetta when I spotted the Hunt’s diced tomatoes on the shelf at Walmart. I’ve used Hunt’s before and I was confident that they are some of the best canned tomatoes around. I knew it would save me so much time and energy from preparing it from scratch, and I was right! All I needed to do was add a dash of salt and a little olive oil and it was perfect. What makes Hunt’s canned tomatoes so great is that uses a unique flashsteam peeling method. Read up on the how these tomatoes are processed in the most natural way possible.
I opened up the can, got my salt and olive oil ready and sliced up some strands of fresh basil courtesy of my basil plant that lives on my windowsill.
I place a bunch of leaves on top of each other, roll them up, and slice thinly. The aroma of basil with the aroma of tomatoes was intoxicating! No bruschetta is complete without a little bocconcini (or fresh mozzarella ) to go with! I sliced 2 whole balls, and placed them on top of the garlic toast and drizzle some olive oil over the top with a little bit of salt.
Then I spooned a dollop of Hunts diced tomatoes on top, and garnished with the fresh basil.
It’s one of my best recipe for tomatoes that I know of – tasty, healthy and my family loves it – perfect on all counts! #DinnerDone
