Happy halloween! Next to christmas, halloween is by far one of my favorite days of the year. Growing up, it was always made into a huge deal because Halloween is also my mom’s birthday. So if you’re reading this mom, and I know you are – Happy birthday!!
Whoopie pies are a fun alternative to cupcakes or cake pops, and they are surprisingly easy to make. Here’s what it took:
- 2 boxes of cake mix
- 4 eggs
- 1 1/4 cups of shortening
- Parchment paper
- —Frosting—
- 4 cups of powdered sugar
- 1 (8oz) pkg of cream cheese
- 1/2 cup butter
- 1 tsp vanilla
- pinch of salt
- For the Whoopie Pies:
- Mix eggs, shortening and cake mix together. It will be thick like dough – That is normal. Use a teaspoon to make small equal sized balls and arrange them on a parchment lined cookie sheet about 1-2″ apart. Bake for 8-10 min at 375F, and watch closely as they burn pretty easily.

It made somewhere between 15-18 whoopee pies, depending on how big you make them.
