One of my favorite quick and simple eats is the grilled cheese sandwich – pair it with a warm & hearty soup and you’ve got comfort food in a matter of minutes. Since this week has been filled with lots of heavy, feast worthy eating its been nice to have a lighter option on the off days. I found these Campbells Slow Kettle Style Soups when I was picking up a few things at Walmart this week.
I always like to pair my soups with a grilled cheese because this sandwich is alot like a little black dress – it’s a classic that can be dressed up as easily as it can be dressed down. I’ve made it with plain ol cheap sandwich bread and I’ve also used gourmet sourdough, as well as a range of different cheeses from american to smoked gouda. Depending on what you use, you can make it your own!
As for my soup, I like to have something hearty and easy to prepare at lunch time – leaves me time to get back to the important things! Campbells Slow Kettle Style Soups is one of my new favorites because its full of flavor and tastes like grandma made it.
When I make a grilled cheese, I usually use whatever I have. In this case, I used some smoked gouda that I had leftover from Christmas and sliced it thin.
In a frying pan, melt about 1 tablespoon of butter on med-high and make sure it coats the bottom well. Place both slices of bread down on the hot surface, and add the cheese to one side, or both if you like it extra cheesy. Let it sit for about a minute, but keep an eye on it to make sure it doesn’t burn. I use a spatula to peek underneath to check how browned it looks.
Once the surface of the bread is golden, put the slices of bread together and flip it. Your grilled cheese is almost done! If the cheese isn’t melted through, just keep flipping it every 10 seconds until it is.
In the meantime, on a separate burner, I warm up some delicious Campbells Slow Kettle Soup on medium until its hot. I always feel like prepared soup turns out better when prepared on the stovetop, so I always try to avoid the microwave whenever possible.
It doesn’t get much better than this!!
