A big family favorite of ours is grilling out in the backyard during the summer months. Steak and hotdogs are ok – but since we are trying to keep it healthier, we do a lot of chicken and grilled veggies. Plain old chicken breast can get boring after awhile, so to try something new and fun, I decided we would have Tyson Cornish Hens that I got from Walmart. I decided to make my favorite soy based soy based chicken marinade because there was a 2$ off coupon that came with the Cornish Hens if you purchased a 10oz bottle of Kikkoman soy sauce. So I both both!

This has always been one of my favorite marinades to use on chicken.. This was my mother’s go-to recipe for marinating chicken wings with – and I always loved it when she made them! So needless to say, I thought they would be perfect for my Cornish Hens.

I started with a large freezer bag in a bowl and began measuring and combining all the ingredients. First, the Kikkoman soy sauce, olive oil & spices. Mix well, and add your chicken & chill overnight for juicy, tasty grilled chicken.

Next I got my Cornish Hens ready for my bag of marinade. I didn’t want to just stick it in the bag as a whole hen because I wanted the meat to fully soak up marinade on all sides. I thought about cooking the chicken spatchcock style on the grill so it would cook evenly. Instead, I thought that cutting the chicken into halfs would better suit our needs. Everyone gets a half hen for dinner, and the leftover one goes to work with my husband as his lunch. Works out perfectly! I always make sure to prepare extra food at dinner for this very purpose.

The next day, I decided to use my charcoal grill because I knew it would add another level of flavor to it. I lit my charcoal and waited for it to be hot enough, and placed my chicken skin side down, and let it cook for about 8-10 minutes with the cover closed. When I opened it back up, I turned the chicken 1/4 to create cross grill marks and close the cover again for another 10 minutes. #Grill4Flavor

After a good 25 minutes of cook time, I flipped them over and let it cook for another 20 minutes. When they were done, I pulled them off the grill and let them sit while I got the other sides prepared. Pair it with your favorite grilled or roasted veggies and you have a crazy-good meal! This marinade also works great for chicken wings – follow the same marinade recipe and bake them in the oven for 45 min at 400F for some amazing appetizers! #CollectiveBias

Soy based chicken marinade

Ingredients
  • 1/3 cup Kikkoman soy sauce
  • 3 tsp olive oil
  • 1 tsp ground mustard
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper
  • 1 clove of garlic, crushed
Instructions
  1. Mix all the ingredients together for 2 lbs of chicken, grill or cook at 400F for 45min to 1 hour.
