This winter has been a brutal one! I don’t know about other cities, but this season was by far the coldest one I’ve ever experienced while living here in Dallas. I’ve referred to it as Canada-cold a few times, because it feels just like home, minus the snow. So in the effort to keep our family warm, I’ve started cooking some quick family meals every night. One of my family’s favorites in particular is my cheesy chicken bacon bake made with the 3 cheese chicken florentine Kraft Recipe Makers that I found at Walmart.
Home made comfort foods can be so calorie intense, so I’m glad I found this as a more balanced and nutritious approach to a comfort food! With lean protein and wholesome grains, this is my favorite better-for-you option than say.. chicken fettucine? I found a few different flavors of the Kraft Recipe Makers in the pasta aisle..
Quick family meals are beyond important for a weeknight, so I started with boiling some elbow macaroni and preheating the oven to 350F. Next up, I cooked up the chicken with the tomatoes and let it simmer, then finally mixed it all together with the cheese sauce.
Once it was all together in the pan, it was a matter of assembling it all in a baking dish. Before I got ready to pour it all in a baking dish, I sprinkled some shredded sharp cheddar cheese in the pan and mixed it up.
To top it all off, I used some bacon bits and crushed up bacon/cheddar croutons… and of course more cheese!
Now it was ready to put in the oven at 375F and bake for about 15 minutes. The crust should be nice and crispy!
