I know that with football on every Sunday, I have more than enough excuses to make something with avocados. Instead of the usual guac recipes that I like to prepare using Avocados from Mexico, I decided to try a yummy hand-held snack that’s perfect for both kids and adults. After viewing some of the yummy recipe ideas online, I was craving some avocados!
It’s easily made – I heated up some crispy chicken strips that I had in the freezer and began to make my toppings. I started with the Ro-Tel tomatoes, then mixed up the sour cream & chili powder for a zesty spread. Assembling the wraps was the easy part, and it’s pretty self-explanatory. The trick is getting it to roll neatly without the tortilla splitting and spilling out the filling. I thought that it helped to have paper wraps that hold it together and I fancied it up with baker’s twine.

- Crispy chicken strips
- Flour tortillas
- 1 can of Ro-Tel tomatoes
- 2 ripe avocados
- 1/2 cup sour cream
- 1 teaspoon of chili powder
- 2 tbspn olive oil
- salt & pepper
- Prepare your crispy chicken strips as directed on the package
- Mix together the chili powder and sour cream, set aside.
- Drain the can of Ro-Tel tomatoes & put it in a bowl.
- Add in the olive oil and salt & pepper to taste.
- When the chicken strips are ready, assemble the wraps.
- Smear some sour cream/chili mix on a soft tortilla, add some of the tomato mix, chicken strips and top with sliced avocados.
Did you notice the kitchen tools I used in making this?
One of these tools is a spatula for batters (hence the bat) and the other is a tool for cutting and slicing avocados. It really cuts though like butter!! I’m loving this tool for avocado cutting
