Easy Cake Mix Whoopie Pies @Jayna

Happy halloween! Next to christmas, halloween is by far one of my favorite days of the year. Growing up, it was always made into a huge deal because Halloween is also my mom’s birthday. So if you’re reading this mom, and I know you are – Happy birthday!!

Whoopie pies are a fun alternative to cupcakes or cake pops, and they are surprisingly easy to make. Here’s what it took:

Cake Mix Whoopie Pies

Ingredients
  • 2 boxes of cake mix
  • 4 eggs
  • 1 1/4 cups of shortening
  • Parchment paper
  • —Frosting—
  • 4 cups of powdered sugar
  • 1 (8oz) pkg of cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla
  • pinch of salt
Instructions
  1. For the Whoopie Pies:
  2. Mix eggs, shortening and cake mix together. It will be thick like dough – That is normal. Use a teaspoon to make small equal sized balls and arrange them on a parchment lined cookie sheet about 1-2″ apart. Bake for 8-10 min at 375F, and watch closely as they burn pretty easily.

I want to make these with a group of kids. How many will this make?

It made somewhere between 15-18 whoopee pies, depending on how big you make them.
