For my husband and I, one of our favorite guilty pleasures is ordering asian takeout. We’ve been trying to limit the consumption though, because the calories can add up, not to mention it can get pretty costly (don’t ask how I know!).
So instead of ordering out, I decided to take matters into my own hands and cook my own takeout! Since this is my opportunity to try and skinny it down from regular takeout, I decided to use the Sesame Chicken flavor from the Lean Cuisine Pack I got from Sam’s Club. There were so many great frozen foodchoices!

I even picked up these delicious little chicken dumplings. Those little sample makers can be a danger to my pre-made list!

I decided to prepare the frozen dinners in the oven because I thought it might give some better crispiness to the chicken than microwaving it. That’s ok, because it gives me some time to prepare the best (and super EASY) fried rice recipe.
- 2 cups of cooked rice
- 5 teaspoons of peanut oil
- 1 slightly beaten egg
- ½ cup frozen peas
- ½ cup frozen corn
- 1-2 tablespoons of soy sauce
- Heat the peanut oil to medium high in a skillet and coat the bottom of the pan. Add in the slightly beaten egg and scramble it over a medium – med. high heat until almost cooked (no liquid). Add in the veggies and stir, then add the cooked rice and stir. Add in the soy sauce to your taste’s liking, and enjoy!

I used boil-in-bag minute rice because well – that’s easiest!

Heat a pan to medium-high with 5 teaspoons of peanut oil and coat the bottom well. Add in the slightly beaten egg and scramble it around until it is mostly cooked. Add in the frozen peas and corn and mix it together before adding in the cooked rice. I like to add about 1 tablespoon (or 2) of soy sauce. Enjoy!
